Winter and soup go hand-in-hand and this Zingy Beetroot Ginger Soup recipe from J.F.Rabbit is sure to hit the spot! It is super quick and easy to make, deliciously full of nutrients and uses the J.F.Rabbit’s Ginger Water from the November Superfoodio box.
Makes 1 serving | Prep time 10 minutes| Cook time 5 minutes
– 2 cooked beetroot balls
– 1 diced onion
– 3 crushed garlic cloves
– 500ml J.F.Rabbit’s ginger water (from the November Superfoodio box)
– 1 tablespoon of fresh grated ginger
– 1/2 vegetable stock cube
– Fresh yoghurt to garnish
– Chopped coriander to garnish
Start by heating a saucepan on low heat and sauté the onion and garlic. Use a blender to blend all of the ingredients including the onion and garlic, until they become a soup consistency. Pour the soup into a saucepan and heat the soup on the hob until hot.
Add a swirl of yoghurt and coriander to garnish and enjoy in the winter months to warm you up.
