Teff flour cookies are a tasty alternative to traditional shortbread. Made using 4 simple ingredients including Lielit’s Teff Flour from our March Classic box, these gluten-free cookies will take tea time to a new level!
Serves 2 | Prep Time 25 minutes | Cooking Time 15-20 minutes
– 100g Lielet’s Teff Flour (from our March Classic Box)
– 80g coconut oil
– 35g coconut sugar/sweetener of your choice
– 1 tsp vanilla extract
Start by heating the oven to 190 degrees Celsius.
In a medium size mixing bowl, beat the coconut oil and coconut sugar together until smooth. Stir in the teff flour to get a smooth paste-like consistency. Transfer the mixture on to a work surface and gently roll it out until the paste is around 1cm thick. Cut into rounds or fingers and place onto a baking tray. Sprinkle with coconut sugar and chill in the fridge for 20 minutes.
Remove the baking tray from the fridge and place in the oven. Bake for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
Enjoy the teff cookies as a snack together with some afternoon tea.
