Hummus Dip

Roasted Red Pepper Hummus


Serves 2 | Prep Time 10-15 mins



– 1 can of cooked chickpeas
– 1/2 red pepper, roasted
– 1 tbsp of tahini paste or 75g of sesame seeds to make at home
– 2 garlic cloves, crushed
– 1 tbsp olive oil
– Freshly squeezed lemon juice to taste
– Salt to taste


Note: To roast your pepper at home and make your own tahini paste, please see instructions below.

Start by adding all the above listed ingredients into your blender and blend on high speed until the ingredients are well mixed and form the desired consistency of your hummus. Transfer the hummus into a dipping bowl and enjoy with a mix of carrot and cucumber sticks or why not try making some moreish homemade Amaranth crackers with the recipe in the August Superfoodio box.

Homemade roasted peppers:

If you don’t want to buy pre-roasted peppers in a jar, you can roast your own at home. To do this, start by preheating your oven at 200 degrees celsius. Place the red pepper on a baking tray lined with foil and leave in the oven for 20 minutes until the skin starts to look soft and charred. Turn the pepper over and roast the other side for another 20 minutes. The pepper will be fully roasted when it looks soft and starts to lose it’s shape. Remove from the oven and allow to cool. Half the pepper and use for this recipe. You can roast more peppers at the same time and use in other recipes such as salads or stir fry.

Homemade tahini paste:

To make homemade tahini paste, follow this simple step: Blend your sesame seeds with a 1 tbsp of olive oil to form a paste. You only need 1 tbsp of the paste for this recipe and can freeze any leftover paste for the next time you want to make the hummus. The best way to freeze the leftover paste is by filling up an ice tray with the paste and placing it in your freezer. Once fully frozen, you can empty the frozen cubes into a freezer bag and store.
