The definition of healthy indulgence – this Coconut & Cacao Bark recipe is sure to be a hit over the Christmas festivities. It is great for gift giving or to have as a treat any time.

– 4 tbsp cacao powder
– 40g almonds
– 120ml coconut oil
– 60ml maple syrup
– 1 tbsp vanilla essence
– 20g desiccated coconut
– 30g banana chips
– desiccated coconut
– pumpkin seeds
Preheat the oven at 180 degrees Celsius.
Place the almonds on a baking tray and place in the oven for 5-10 minutes until lightly golden. When the almonds are done, remove them from the oven and chop roughly.
Combine the melted coconut oil with the cacao powder, maple syrup and vanilla essence in a medium-sized bowl. Add the almonds and the desiccated coconut to the chocolate mixture.
Prepare a baking tray with baking parchment and pour the chocolate mixture onto the tray. Top with sprinkling the crumbled banana chips, extra desiccated coconut and pumpkin seeds.
Place the baking tray in the freezer until hardened. Take out and break into pieces. Store in the freezer and enjoy!
