Home made Amaranth Pizza Base
Makes 2 Pizzas | Prep Time 35 mins
For the Base:
– 70g Amaranth flour
– 50g Corn flour
– 50g Wholewheat flour
– 1 small sweet potato, grated
– 1 tbsp chopped spinach
– 1 tbsp coconut oil
– Water, as required to make the dough
– Himalayan pink salt to taste
– 2 thick plastic sheets/zip lock bags
For the Sauce:
– 1 can of plum or chopped tomatoes
– 25g cashew nuts
– 4-5 basil leaves
– 1/4 tsp brown sugar
– 1 tsp ground black pepper
– 1 tsp salt
– 1 garlic clove, crushed
– 1 red or brown onion, diced
For the Toppings:
– 1 orange bell pepper, diced
– 1 yellow bell pepper, diced
– A handful of spinach leaves for each pizza, washed
– Green olives
– A handful of chopped coriander
– Feta cheese, crumbled, or cheese of your choice
Start by placing a griddle pan on low heat so it warms up while you prepare the ingredients. At the same time, preheat your oven to 180 degrees Celsius.
In a large mixing bowl measure out all of the ingredients, except the water. Begin by mixing these ingredients with your fingers and gently start kneading into a smooth dough. Add one tablespoon of water at a time as required to bind the ingredients. If you find the dough is sticky, add some more flour and knead until smooth.
For the next step, you will require two thick plastic sheets. You can even use two closed zip lock bags. As amaranth flour is gluten free, it can become difficult to roll out the dough using a rolling pin. Using the plastic sheets helps to spread out the dough when using a flour that is harder to handle.
Take the plastic sheets and grease with the coconut oil and sprinkle with some flour. Divide your dough ball into two pieces and place one of the balls onto one of the greased sheets. Place the second sheet on top of the dough and slowly pat into a circle using the palm of your hand, until it is the size of medium plate. Remove the top sheet and carefully lift the pizza base from the plastic and place it on the hot griddle. Drizzle a few drops of coconut oil and cook one side until it becomes slightly golden brown. Carefully flip with a spatula and cook the other side.
Remove the pizza base from the griddle and place onto a flat baking tray. Repeat with the second dough ball to make the next pizza base.
To make your pizza sauce add all of the ingredients, except the onions, into a blender. Blend until mixed well and then stir in the onions. Spread your sauce on the base and sprinkle the toppings and feta cheese. Place in the oven for 5-10 minutes.
